A Few Days Away in New Hampshire

After receiving an email for 2 nights for the price of one, plus an in room amenity (chose champagne and truffles....haven't had the champagne yet, ate all the truffles myself), and a 30.00 golf credit (and the golf was only 35.00), we headed up to Whitefield, New Hampshire to the peaceful setting of 
The Mountain View Grand Hotel.

It's so big, it's hard to get the whole thing in a photo. The front porch is lined with adirondack chairs. It's a perfect place for a frozen cocktail, a good book, or just some quiet time.

No matter which way you turn, the setting is gorgeous. It was in the 50's at night, and barely 70 degrees during the day.

When Life Gives You Blueberries...Make Pie!






Here's My Favorite Pie Recipe...I've made it for years and love that you can throw it together in no time at all!

Ingredients:

  • 1 homemade or store bought 9 inch crust (gluten free if needed)
  • 6 cups fresh blueberries, divided
  • 1/4 cup sugar
  • 2 tablespoons water
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • 1 tablespoon butter
  • 1 tablespoon lemon juice (preferably fresh)
  • fresh whipped cream

Directions:

Combine 2 cups berries, sugar, and 2 tablespoons water in large saucepan; bring to a full boil. Dissolve cornstarch in 1/4 cup cold water; add to blueberry mixture. Return to a boil, stirring constantly. Reduce heat to low and cook, stirring, for 2 minutes. Remove from heat. Stir in butter, lemon juice and remaining 4 cups of blueberries. Spoon into crust. Let stand 3 hours until set.(You may choose to chill). Serve with whipped cream.
Serves 8.

My Dream Job

Now don't get me wrong, I love my job....but a girl can dream, right? I had so much fun today cutting lavender and arranging it for a mini photo shoot for my Etsy shop.

I kept thinking, "There has to be someone out there who wants to pay all of my bills off so I can do this full time....yes?"

In planning my dining room, my son (13), keeps teasing me that all of the tables I look at that I like look like picnic tables.  I suppose he's right. So maybe I should spend $100 on a sturdy picnic table and stain it weathered barn grey. Sure beats the price tags I've seen.
