Gluten Free Magic Bars and a Happy New Year!

Thanks Soooo Much Kinnikinnick! We finally found a yummy baked good that really doesn't taste any different than the original. Needless to say, we have been eating LOTS of Magic Bars around here. I modified the original Eagle Brand recipe.

Ingredients:

1/2 cup butter or margarine, melted
1 1/2 cups Kinnikinnick Gluten-Free "Graham Style" Crackers*
(I process in food processor)
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 cups semisweet chocolate morsels
1 1/3 cups flaked coconut
1 cup chopped nuts if desired

*You will need to buy 2 boxes....use the extras to make s'mores!

Directions

Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.
Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

Note: I always check that the chocolate chips I am using have not been processed in a facility that processes wheat or other gluten containing products.

Have a wonderful New Year's Eve!

  4. Magic Bars look and sound yummy. I noticed you sound slightly desperate for great-tasting GF treats. Have you tried anything from Elana's Pantry? All of her recipes use almond meal as a flour base, and most of them are simple with very few ingredients. She has a few books out, but I like the free blog better because a) it's free, and b) she modifies and improves the recipes. ;~) http://www.elanaspantry.com/
